Vinification

This wine was made out of carefully selected grapes from centenary vineyards located in Criação Velha, about 420 meter from the ocean, exclusively from the Arinto dos Açores grape variety. After destemming it spent 2 days in cold maceration with the skin and fermented with indigenous yeasts in a French oak barrel. Aged on fine lees for 7 months, was bottled in May 2019 followed by the bottle stage in Gruta das Torres (lava cone with 1.500 years) for 15 months at 17 meters depth, constant temperature of 15ºC, 90% humidity and total absence of light.

Tasting Notes

Greenish yellow color, it is a wine that takes us on a “journey” of volcanic sensations. Involving fresh grapefruit, araçá and lime, some notes of powder and sulfur, seaweed and sea air. In the mouth it shows several layers, starting with a prevailing freshness, followed by a very involving and full taste, and ending in a surprisingly long and salty finish.
